Now that the holiday season is here, Jamon Iberico is a great menu addition! For four generations, the Montaraz family has grown and cured Jamon Iberico. This exceptional product is made from pure breed Iberico pigs from Salamanca, Spain. Montaraz jamon is cured with only sea salt – no nitrates or nitrites – for more than 36 months, resulting in its deep red color, supple texture, and intense flavors.

Pearl Street Caviar

Pearl Street sources all of their caviars from farms. They work exclusively with farms located on natural waterways with high water flow. This means the fish are exposed to the minerals and vitamins that sturgeon find in the wild. Rivers in high-elevation forests feed the lakes. They only harvest in cold-water months to maintain structure (firmness/pop) and flavor.

Their caviar is just the eggs and a little bit of salt (salt from the Alps). That’s it.
