9-6-24 Weekend Update

According to the New Bedford BASE Scallop Auction data from 5/1/24 through 8/31/24, U/10 and 10/20 landings are down by almost 50%, or 3 million pounds from the same time last year. Due to these sustained supply conditions strong pricing pressure remains across all sizes, this pressure continues to grow as there are no anticipated supply changes over the coming weeks.

8-23-24 Weekend Update

The North Atlantic sea scallop spawn takes place every year late summer to early fall when water temperatures are warmest. The result of a spawning female scallop is the change in pigment, texture of the meat, and release of water "milk" after harvest. This release of water from a female scallop in spawn is a natural occurrence, and has no impact on taste or quality of the scallop.

Guanciale is an Italian cured pork jowl or cheeks. Its name is derived from guancia, the Italian word for 'cheek'. It's that time of the year again!

During the winter months, lobsters move further offshore, requiring lobster boats to travel greater distances, and the harsh weather makes it more difficult for fishermen to work. Slower fishing coupled with the Chinese new year have diminished Canadian lobster stocks. We will have to wait until the weather warms up and fishing becomes more abundant.

For four generations, the Montaraz family has grown and cured Jamon Iberico. This exceptional product is made from pure breed Iberico pigs from Salamanca, Spain. Montaraz jamon is cured with only sea salt – no nitrates or nitrites – for more than 36 months, resulting in its deep red color, supple texture, and intense flavors.

Pearl Street sources all of their caviars from farms. They work exclusively with farms located on natural waterways with high water flow. This means the fish are exposed to the minerals and vitamins that sturgeon find in the wild. Rivers in high-elevation forests feed the lakes. They only harvest in cold-water months to maintain structure (firmness/pop) and flavor.

As Lobster prices will inevitably rise during the fall months, try using frozen CKL meat as a price conscious alternative. Le Breton Canadian claw, knuckle, and leg meat is very good quality and not an over abundance of leg meat mixed in. It also has minimal water loss upon thawing.

Bruce Gore and his company, Triad Fisheries, have been marketing hook-and-line caught wild salmon from southeast Alaska since 1978.

These King Salmon are caught using slow hook-and-line method to minimize stress, processed immediately on-board, and frozen within 90 minutes.

For over 50 years, Aceitunas Losada has produced table olives in Carmona, Spain, near Seville. The family-owned company controls the entire process from hand-harvest in their groves to curing. The current generation owners are siblings, Luis, and Maria Losada, who have focused on resurrecting forgotten olive varieties and returning to traditional natural curing methods.
