Bruce Gore Wild King Salmon
These fish are truly beautiful. They are troll-caught at low speed for minimal stress on the fish, then immediately cleaned, bled-out using ikijime method, quickly dipped back in salt water to create a protective glaze, and then frozen to -40*F on the boat within 90 minutes of the catch. The result is a truly pristine product that maintains firmness much longer than most wild salmon that arrives to us fresh.
